Soak in three times the volume of water for 8-12 hours. Discard soaking water before cooking.

Cook with fresh water until completely tender. Smaller mountain grains usually cook faster than commercial varieties.

Add to your onion-tomato masala and simmer slowly so the gravy absorbs the earthy mountain flavour.
